Recipes for first dishes: Risotto with mint and goat cheese. In Merano the Castle Trauttmansdorff, or rather the enchanting Sissi gardens home of the restaurant Schlossgarten, where in his laboratory of culinary art the chef Markus Ebner has created one of the most delicious recipes with goat cheese, a fresh and fascinating dish. Ingredients for 4 people:
  • 300 g Carnaroli rise
  • 300 g goat cheese
  • 1 sprig of mint
  • 1 liter of vegetable broth
  • 50 g butter
  • salt and pepper
  • extra virgin olive oil
  • 1 pinch of salt
Procedure: Put the mint leaves and goat cheese with salt in a blender so that it forms a smooth cream. In a saucepan, toast the rice with a little olive oil, cover with the boiling broth and adjust with salt and pepper. Bake for 15-20 minutes, stirring frequently and adding broth from time to time. When cooked, turn off the heat and stir in the risotto the cream of mint and goat cheese and mix it with a little butter. Garnish with some mint leaves. www.trauttmansdorff.it
